I intended for every millimeter of this forged piece to have those 2 things. “Taca Croí” means ‘heart rest’ in Irish, and the actual shape of the integral choil is meant to resemble the simple love heart, and additionally be a metaphor for what I believe care in cooking represents. This bar of steel has been forged into a heart-shaped rest for the hands, and a rest for the heart. Forged from an end cut of dense twist round bar, you can see the straight layer pattern on the top of the tang before it transitions to the twist starting around the choil. I love how the steel flowing this way almost embraces the handle. The differential finish and polish on the edge is also one of my favourite ways to finish Damasteel as it shows the incredible potential of the material in different ways and also allows for a stable, nail-flexing edge, uninterrupted by deeply etched layers. The heirloom fit handle of live-edge amboyna further challenges that line between the clean and the raw. “Taca Croi” my friend.
