Björkmans Twist Santoku, Black Mango

Perfect for the jobs in the kitchen where a full-sized chef’s knife or Gyuto feel a bit overkill. Deep enough in the heel that it works great for slicing and small enough not to be cumbersome. I love the hammered brut de forge finish which hints at the pattern and the museum fit up on the handle which indexes very nicely in the hand.
